Sweet potato healthy eating recipes :

Sweet potato soup.

This soup is simple and delicious, great for impressing your friends or when you host dinner parties.

2 tsp olive oil
1 small onion
2 tsp cumin
2 tbsp curry powder
450gms carrots
450gms sweet potato
1 vegetable or chicken stock cube
500ml boiling water


Finely chop and saute the onions in a large pot until soft and brown, then add spices. Peel and cut the carrots and sweet potato into 1-inch pieces then add to the pan. Add the stock, bring to the boil, cover and simmer for 20 minutes. Allow to cool, then add the vegetables and stock to a blender, blend until smooth. Gently reheat to serve.

Sweet potato dip.

1 medium-sized sweet potato
1/2 tbsp low-fat plain yoghurt
1 tbsp Forever bee honey
1/2 tsp chipotle chilli powder







Heat oven to 200 degrees C. Prick the potato in several places and bake for 40 minutes until soft. Scoop out the soft flesh and leave to cool. Once cooled add the potato, yoghurt, honey and chilli powder to a food processor and blender till smooth. Leave to cool further in the fridge for a couple of hours. Serve with carrot sticks, sugar snap peas or pitta bread.




Sweet potato wedges

3 medium-sized sweet potatoes
Low-caloreis spray cooking oil
1 tbsp seasoning (choose to taste)






Pre-heat oven to 230 degrees c
Wash sweet potatoes well; cut each potato into about 8-12 wedges
Put sweet potato and the rest of ingredients into a large bowl and toss till well coated
Arrange potatoes in a single layer on a baking sheet. Bake at 230 degrees c for 30 minutes, or until soft or lightly brown, turning wedges after the first 15 minutes.
Serve immediately.
